Sam’s Rendered Duck Fat is an All-Natural product from farm raised, no growth hormone, antibiotic-free ducks. Duck fat has a deep browning effect and is ideal for roasting potatoes.
A 16 ounce container of duck fat is suitable for oven frying three pounds potatoes.
Oven Fried Duck Fat Potato Recipe:
3lbs Yukon Gold / King Edward potatoes, peeled, cut into thirds to produce wedge shape
16 ounces of duck fat
2 tablespoons semolina flour
Preheat oven to 500 F
Peel and cut potatoes into thirds to produce wedge shaped pieces
Parboil potatoes for 4 minutes. Drain potatoes and return to a dry saucepan. Sprinkle with semolina and secure saucepan with a lid and shake potatoes vigorously to fully coat in semolina flour.
Heat duck fat in large roasting pan until blistering hot
Carefully add the semolina coated potatoes to duck fat. Roast about 30 minutes a side / hour total.
